This cake is as pretty as it is delicious. But the best part is that its SO easy and fun to make. I made it for Christmas and my mom told me it was something her mom used to make! Melted my heart that I was almost carrying on the tradition and a little piece of her was there on Christmas with us. Now, this cake is not gluten free, and in no ways healthy, but if you’re looking for a pretty treat for yourself or guests, this is a go to.
Ingredients:
- 2 tubs of “So Delicious Original Coco Whip” (or use real whipped cream if you’re not dairy free!)
- 2 packages of Nabisco Famous Chocolate Wafers
- 1 lb fresh strawberries
- Optional: 1 chocolate bar (for shaving)
Instructions:
Before your begin, grab the cake stand/platter that you plan to serve your cake on. Once you assemble the cake, it’s almost impossible to transfer to a different plate so you’re going to build your cake on the serving platter. Something to keep in mind is height! This cake will need to sit in the fridge for 8 hours so make sure your cake stand isn’t too tall to fit in the fridge.
Next, wash your strawberries, remove the stems, and slice thinly.
Begin by spreading a thin layer of whipped cream in a circle in the center of your cake stand about 7 inches in diameter. Add one layer of the wafers so that you have made a “flower” design. One wafer in the middle with a circle of wafers around it. Add another thin layer of whipped cream (let’s say 1/4 inch thick) on top of the wafers. Add a layer of strawberry slices. Repeat with: whipped cream, wafers, whipped cream, strawberries.
Add as many layers as you’d like, or as many as you can fit in your fridge (lol) you can get at least 8 layers in with the amount of ingredients you have.
Refrigerate for at least 8 hours before serving. The wafers will absorb the moisture from the whipped cream and will take on a cake-like texture. You can refrigerate for longer if needed but make sure to get at least 8 hours in.
Remove from fridge and use a peeler to shave the chocolate bar on top, if desired.
